However, Fitalia is crafted exclusively on the island of Sardinia, a pristine, secluded Mediterranean island off the coast of Italy. Known for its rugged mountains and beautiful coastline, Sardinia is also home to the Sarda sheep, whose milk is used to craft Fitalia.
The Sarda sheep breed is indigenous to Sardinia and well known for producing the milk used to make Pecorino Sardo. These high-yielding animals are considered among the finest Italian dairy breeds, providing cheesemakers with exceptionally rich, flavorful milk that results in beautifully full-bodied sheep’s cheese.

Fitalia is a brined sheep’s milk cheese, bright white in color with a semi-soft, gently crumbly texture. It offers a lightly salty flavor balanced by a rich, creamy mouthfeel that lingers on the palate. As it matures, its character deepens, developing a sharper and slightly saltier taste.
